Remove Stripped Screw Help

It's off centre but it doesn't look like you hit the threads, which is good. A little heat, lube and small square ez-outs works the best. If not, drilling out the head to the bolt dia as mentioned before will allow you to get the mount off and maybe leave something to grab on to. If you don't feel comfortable play it safe, leave it for someone else.

I think your right on the square style easy out and a bit of heat. If the head comes off there won't be much solid to grab onto with vice grips but it might make the easy out operation a little..... easier!
 
If your drilling a hole for an extractor use left hand drill bit, some times the screw will release in that process.

The trick there is finding a suitable left hand drill bit..... :)

That looks like an open hole?
I'd get a small punch and tap the ends in.
This would be at 2:00 and 4:00 looking at the second photo.
This should shrink up the bigger side of the threaded screw.
 
I would sacrifice the sight, if possible, and cut a notch using a Dremel cutting wheel. Then, using maximum downward force, loosen with a tight fitting slotted screw driver. Better to replace the sight than risk buggering the hole. Worked for me in the past with small screws and red loctite.
 
If it's got locktite use a small torch or a soldering iron to heat the screw up. Then using a drill press I'd drill the screw from the bottom using a bit small enough to not damage the threads in the receiver. Hopefully the bit catches and turns the screw out, if not you should be able to drill it slightly bigger and chase the rest of the screw out with a tap.
