The Hunter Chef Cookbook: Hunt, Fish, and Forage in Over 100 Recipes

Check out the new cookbook that was just released by Michael Hunter who some of you may know as the chef of Antler Kitchen & Bar in Toronto.
I haven't tried any of the recipes yet but at first glance it looks like a great cookbook for the hunter to have on hand.

Just a quick review, it starts with some butcher guides for deer, duck and turkey. Then has four recipes sections:


  1. Large Game: mostly venison but also some boar, elk and moose
  2. Small Game: turkey, duck, grouse, goose, dove, pigeon, rabbit, squirrel
  3. Fish & Forage: Pickerel, trout, perch, prawns, halibut, lobster, wild mushrooms, wild blueberry, etc.
  4. Wild Deserts and Foraged Cocktails: all kinds of interesting things in this section......

Check it out folks!
I'm going to give the Braised Venison Shanks recipe a try soon.
If anyone try's some of the recipes please post your results!








 
I hope the cookbook sells real well. The author, Michael Hunter, has obviously put a lot of time and effort into this book and I think it will help promote hunting and bring it some good press. Could be a good Xmas gift for the hunters know..........:rolleyes:

I made the Venison Tourtiere from the Hunter Chef cookbook last night. Turned out great, very tasty!

 
I lent the book back to the "Giver" last spring and have not seen it since!!
LOL
I guess it really is a great cook book.
 
Not a hunting specific book but "charcuterie" by ruhlman and pocyln is a must have if you want to up your sausage making/ meat curing game
 
I also like Cook's Meat Illustrated. Available on amazon.

It's not specific to game meats but gives a really good idea of how to cook/deal with the various cuts of meat.
