Are handguns with 4" barrels prohibited in Canada, and if so can you purchase a 5", 6", or larger barrel and switch it to restricted? Most guns I see here are prohibited with 4" barrels but some models are recent and have the option for larger barrels. Also, what other things make a handgun prohibited?

You are right 4" barreled handguns are prohibited and they can be converted by a gunsmith and reclassified to restricted status. Depending on what handgun you want to convert it can be from very easy to next to impossible to find a replacement barrel.

The Criminal Code defines the following firearms as prohibited:
handguns with a barrel length of 105 mm (4.1 inches) or less, and handguns that discharge .25 or .32 calibre ammunition, except for a few specific models used in International Shooting Union competitions;.

As long as the handgun is not designed or adapted to discharge a 25 or 32 calibre cartridge.
