What bush critters make it to your pan/pot that are out of the "ordinary" ???

I've had some great meals made fresh from the bush - awesome to experience!

Muskrat quiche, beaver - made into a hunt camp boiled dinner, squirrel, groundhog soup.....to name a few.

I can't wait to try a raccoon - they're suposed to be great too!

Well, not a land animal, but the weirdest thing I've ever had pass my lips was a Sea Cucumber.

Had the consistancy of soft jello, and didn't taste like much. Wouldn't bother preparing it myself...

Racoons are quite tasty in a stew; I cooked up a number of them when I used to own chickens. Sea lion is not bad in a stew as long as you trim all the fat off. The fat tastes like a mixture of rancid oil and seaweed. The meat is almost black.
Cucumbers are excellent eating as long as you do not overcook them or they get tough. Sea urchins however are an acquired taste for me at least. Possibly the strangest food was the little live crabs that live commensally in horse clams. Pop them in your mouth and bite fast. :>)

At our spring BP shoot (March Hare) we useto make 3 large pots of stew 1 chicken,1 rabbit & 1 beaver. the beaver was the first to go. We stopped making chicken & made 2 pots of beaver that too went. It was always good & very rich.
 
Guinea fowl, crocodile, iguana, girafe, emu, bison, various squirrels, chipmunk, beaver, grass snake, fried termites, ling, chocoloate covered ants, ring necked pheasants, kudu, bushbuk, black bear, moose, white tail deer, cariboo, seal flipper pie, shark fin soup, cod cheeks, turtle soup, ...all of them were yummy.
 
I ate a furry beaver once, strangely enough it smelled like fish and taste like nothing I have ever tasted.....didnt really care for it;)

I've had squab (pigeon), eel, frog legs and snails. But, these were cooked up in fancy restaurants. I've also eaten horse meat when I was a kid, now I ride them. I did threaten a #####y mare once that I could have her as table fare if she didn't behave....it worked ;) I'd try anything once, and I do hate Brussel Sprouts, I'd eat anything before those gross little cabbages :)

Musk-ox, alligator, wild boar, buffalo, pigeon, seal, daulphin fish, shark fin soup,octopuss, squid, grouper....caribou, jackrabbit, codfish, "crackling?" (cajun style fried pigs ears!) and fallow deer too.....arctic char, greyling, catfish, sturgeon, ling, crawfish, sandhill crane, merganser, mudhen, shoveler duck, antelope, king crab
