Just wondering, can you drop the tailgate fully?

If you can’t just get a hitch extension

I bought one a few years back from a guy that was making them. Here it is when I was butchering a pig. Very handy gizmo.

I have the HME one, it works OK and you can work with the tailgate down, but I would not trust its strength on anything bigger than a medium size whitetail.

When I built mine I wanted it to be take-down for convenience, just like you. But instead of square tubing, I used round tubing, and a pair of 4” flanges that were scrounged from a job sight. Now with 2 bolts it is held in place, but buy removing the 2 bolts, it will swivel to swing the load into the bed of the truck.

The one i bought from princess holds my tag without issue. I bet it could carry many years worth lol
