Why is bear so underrated?

I’m saying I’m not. I prefer to eat meat that doesn’t have worms crawling out of it.
Bit of an over reaction to that threat I figure.
Trichinosis needs to be considered, same as with pork, but that shouldn't be a reason to just toss it in the bush where apparently nothing will eat it.
So no pork for you, shame, pork chops are awesome :)

I don't know about other provinces regulations off hand, but in Alberta it is not a requirement to salvage bear meat because of the perceived trichinosis threat.
Personally I think it's wrong, any wild meat can contain forms of parasites, but that's the regulation.
No way I'll leave bear meat in the bush, and just the few pics in here easily show why.
 
You guys add anything to the burger mix or just straight ground bear?

you can mix with everything if you do burger but for example if im doing a gulasz or bear bourguignon with bear meat i will add a little of bacon but that is it.

now for the one scared of worms after a good cooking never seen one: so maybe they mix with the rest and add some good proteins lol

I have a friend that is a trapper. Should he eat the coyotes he traps? The beaver? Martins? Wolves? How about the cougar hunters? Do they all eat the meat? Brown bear hunters in Alaska? Grizzly hunters?

You need to step down from your high horse. Your understanding of hunting is as narrow.

I had beaver and cougar at a game club dinner some years ago. The cougar meat was done in chops , the beaver done on kebabs. I didn't care for the beaver , it was kinda too greasy for me but the cougar.... that was some very fine eating. I went back for seconds but it was all gone by the time i got there LOL

Last game banquet I went to had sweet and sour cougar. There were no seconds to be had either.

I donated a couple bear hearts and livers and they did a tureen with added game meats. Was awesome.

MeatEater has a recipe I'm going to try as I have a couple more bear livers and some mule deer liver and whitetail meat in the freezer.

I love bear meat. The best roast I have ever eaten in my life was a bear neck roast slow cooked in a crock pot the day after I shot it. Anyone that says they don't like bear meat either doesn't know how to properly clean it after harvest or properly prepare it. IMO.

Why, I could say the same thing about juvenile bovine testes. If you won't entertain them...you just about a...gasp...vegetarian.
 
I don't do anything different then if I was making home made beef burgers. Some add pork fat to game meat but that is not something I have ever done to any meat I have harvested. Not against it, just not for me.

I agree. I have never added anything, be it bear, deer, moose or elk.

I’ll add an egg or two from our chickens like I do with hamburger, sometimes I’ll add chunks of slab cut smoked bacon to give it more fatty/juicy element to it while cooking. I do the same with ground rabbit burgers, is excellent. Otherwise I don’t go to wild with it, I like the natural flavour to stand out regardless of what it is I’m making/cooking.
