I think if you got the M17 version the striker spring is extra power and should light up even the harder steel case primers. (Normal P320 striker springs are silver and M17 are black)

Good job choosing the P320 platform. Again it’s not the best at anything in particular but if you stock up on slides and grips, you don’t have to baby it when you use it after the ban.

One important thing about this platform, never ever insert a long oversized mag into a short frame (ie 17 round size mag in compact frame), it’ll bend the ejector upwards and it’s integral to the receiver part, it’s non replaceable. Just stick with 17 round size mag and full/carry length grips

The P226 platform also gives the option of a .22LR,9x19,357SIG & 40S&W caliber X-Change to shoot 4 chamberings from 1 frame.

With a P226 357/40 slide a 9x19 "conversion" barrel & appropriate recoil spring allows 9mm function in the aforementioned slide.
 
I generally recommend an all metal pistol. It’s not like the weight is a concern in Canada. If we were carrying them all day, then there’d be a benefit to a polymer pistol.
 
My feelings:

Target work: SAO Hammer - full stop. Look at the operating designs of the guns being shot in Olympic, ISSF, & NRA Bullseye disciplines.

Real world: It’s a wash; find what works for you. Personally my preference in general is SAO Hammer, Striker, DA/SA Hammer, and finally the weird stuff like DAK, LEM, etc. Keep in mind that a well set-up striker or DA/SA could very well be nicer to shoot than a poorly set up SAO Hammer.

Don’t worry about what military and police use. Sure, lots of elite units have used 226’s, but no more so than 1911’s, Hi-Power’s, and Glock’s. Standard service sidearms, provided they meet min performance specs, are chosen on price, politics, or a combination thereof. Mil-spec doesn’t mean it’s necessarily good, just good enough.

FWIW, when I carried a pistol (both BHP & SIG) I wished they were polymer. Didn’t need/want the extra weight in something that was truly Plan Z for my role.

It's really to bad they couldn't have given the 320 the same grip feel as the 226. After owning a p226 for a decade or so I couldn't realy care for the grip on the 320.

As far as polymer guns go, atleast you can/could swap out the plastic if you wanted to mod/replace if it was damaged. Now more than ever it might matter as apparently we can't just buy a replacement firearm/frame(glock) when it gets sacked out. A year from now I bet they will be in the same bin as the ar15 anyway.

You can hunt down the AXG aluminum grip, I heard it gives it the p226 weight and feel.
