MD doe is my fav meat deer..

I found they tase about the same, mind you my 3 deer this year(md buck and doe and wt doe) the gut piles were within about 400-500 yards of each other on the same ridge. So they likly had very similar diets.

I have used buttermilk in the past, marinate over night.

Muley

Took a 4X3 medium Muley in Alberta in November and cant say I've noticed a difference between it and the Whitetail I have, but have heard some people think Mulies are stronger. I recommend drinking more red wine with it , makes everything feel better.

Its joe here ,I tried black instant coffee today . And it was great . it gave the meat and almost sweat taste to it . and aslo a smoke flavour . very good . in a bag coulpe of table spoons of instant and cold water , and let sit for over night . try it . Joe
 
i find that if you get the hide off the animal imediately on killing it and get it in to cool out fast. i leave them hang for a week but if you leave the hide on for any time it sours the meat on anything muley, moose, what ever you kill need proper care to be good to eat,, wade
 
In my opinion there is not enough garlic in the world to make a mature mule deer, which is in full rut, taste good. When the neck is the size of a 5 gallon bucket and the animal reeks of rut scent your shooting them for the antlers and not table fare meat.
 
Muley taste

Try soaking in buttermilk in the fridge overnight in a closed container.Be sure the meat is fully thawed first.
Another good soak is in Clamato juice. It tenderizes and gives an excellent flavor.
 
Ditto - milk does the trick, even with duck, but as posted above I'd rather eat a mulie over a WT any day - here they both eat whatever they want whenever they want, from greenfeed oats to alfalfa and eventually ripe grain. I honestly don't know what this "wild" taste is, and we get moose or elk plus deer every season. Haven't had a "wild" one yet!
 
I got a few Muley in the Wainwright cul this year . I am retired military , And I was raised in manitoba . I have found that Mule deer have a more gamey taste to them , than Whitetail . My KIDS AND MY WIFE BOTH LIKE WILD GAME , But they didn`t like the more wild tasting flavour of mule deer . tO MAKE A LONG STORY SHORT , Does anyone have a maranade to help take the STRONG wild taste out of the meat . Any recipies would be great . It`s either that or I will have to give the meat to some one else who will enjoy in more and not let it go to waiste . thanks in advnace Joe Lafortune CD Pm o Email would be great .

I know what happened. As retired military, you had a few spare rounds of Czech ammo in 7.62 and you shot the deer with it.

Alberta mulies hate cheap Czech ammo and thus they release the contents of their musk glands directly into their muscle tissue.

You could marinate it in WD-40 and it will still taste bad. Buy some commercial ammo ;)
 
I come from four generations of butchers. In my opinion 90% of so called "game" taste is from contamination of the meat with bacteria, urine, scent gland excretions, feces, and all the other crap that hunters don't bother to keep off their hands when they're field dressing, skinning, cutting and handling meat. Over more than 50 deer I have personally shot, about evenly split between whitetail and mule deer, mature bucks and antlerless, I have not found much difference in "gamy" flavour. A few were tough, some bucks meat smelled a bit from hormones DURING COOKING but the meat had no "gamey" smell after cooking. Tenderness does vary. BUT if you just touch a rutting buck's tarsal glands, and then the meat, without thoroughly washing your hands, that meat will definitely taste "gamy". Same with gut shot critters & paunch contents. Bring wash water and soap with you in your truck, carry some surgical gloves, and use them. Sheets work better than cheese cloth to keep skinned carcasses clean. Scrupulously trim away the contaminated outside rind of the meat and all fat when cutting meat for the freezer. Don't use a bandsaw, use a knife. Double wrap meat very well, in plastic film and paper, or better yet vacuum pack to prevent freezer burn.
All this won't help you salvage ruined meat, but you may fare better with the next stuff.
Mule deer are good eating!
 
Thanks Longwalker, you saved me a lot of typing. Meat handling! And what they eat... We always take the tarsal glands off immediately by skinning being careful not to cut into them from underneath. Next we gut, skin and hang immediately. We have many nonhunters compliment us on our Muley steaks. I think young bucks early in the season around an alfalfa field may help too. I've been told that being very careful in how you cut steaks with regards to the grain makes a big difference in how tender the meat is too. (right angles to the grain).
 
Try making muley bourguignonne (or otherwise known as boeuf bouguignonne when cooked with beef) which is essentially meat cooked in red wine. Cut the meat up into stewing pieces, lightly braise with garlic and finely chopped pieces of bacon or pancetta, add flour, beef stock, a bottle of red wine, and a bouquet of herbs then leave in the oven for a few hours. Before serving add lightly cooked button mushrooms and button onions. Serve with an assortment of roasted vegetables and mash potato. Most people who are averse or fussy about eating wild game meat will think they`re eating beef.

Don't listen to any of these other posts, muleys taste bad no matter what you do to them! You can drop off all that yickey meat at ....;). PM for directions.
