Own the following cartridges, what am I missing?

You are not missing anything. I keep fewer calibers easier to keep what I have adequately supplied with ammunition.

I think I have all the basics covered except for long range. I don't feel like any of my current options are ideal for hunting beyond 400m or ringing steel at 1000m.
 
Thanks for the recommendations. I basically use my 45-70 as my close up thumper for up to 150m. I am also considering a 30-30 once the new Marlins arrive so Im not sure if I will still need another option for close range lever hunting?

As im also looking for more of a long range hunter, I may go with a 338WM to fit that need and to also fit between the 30s and 375. I'm not sure how well the 338WM would be to also use as a long range target cartridge vs a 7RM or PRC options.

Then have a look at the 338 Norma...read a good write up on the 300 and 338 Norma's recently, and the 338 Norma has made a name for itself in the long range crowd, and has advantages over the 338 Lapua (which I have shot, and isn't all that bad for recoil, even compared to the 338 Win Mag which I used to own). Has me intrigued...and if I were looking for another 338 for longer distance shooting, I am thinking I would look hard at it!
 
I have considered that. I've only taken grouse with my .22's but was considering the 12 gauge the last time I was out.

Would 12 be overkill for grouse?

No, 12g and a .22lr covers you for any small game including grouse. 12g is all I shoot grouse with and I’ve never said man that’s overkill.

You’re missing a 30-30, something rimmed like 7.62x54r or a .303brit just for fun.
 
In terms of my current usage for each:
.22 LR - small game/plinking
.223/5.56 - varmint/ plinking
9mm - plinking
.38/357 - plinking/ potentially deer
7.62x39 - plinking/ potentially deer
6.5x55 - Coyote to moose. Little heavy for coyote, little light for moose.
.308 - deer/moose
.30.06 - deer/moose
375H&H - Moose/Bear/Bison
45-70 - Moose/Bear/Bison
12 gauge - Clays/ small game/ turkey/ deer

So it looks like I'm missing something between .223 and 6.5x55. Also missing the 7mm, 8mm, 338s, 35s and any of the higher velocity >40cal offerings.

The 375 Raptor would make a fine choice for folks wanting an all round, easy to load for cartridge that fits dandy in short action rifles. Best use for the .308 Win case in my book. A simple rebarrel and yer good to go without further tweekin' on the action or magazine.
