field dressing knife

Some of my favourites:
North Arm Lynx
Joker Ursus
Lion steel M3M
Benchmade Hidden Canyon
Ruike Jaeger
Esee 4 stainless
White River Ursus 45

Probably my absolute favourite is the North Arm Lynx. Worst knife I’ve ever field dressed with was a Gerber Strongarm.

I have two of these and only use them in the kitchen because mine don't hold an edge for long
are there different SKUs that work better?
No clue honestly, I found mine on the roof of my shop at our last house. 😂 Probably been using it for a good 4-5 years now, it’s the only knife I use in the field now. I use a steel to touch up the edge but that’s it.

Forgot to mention, I bought a Kershaw Deschutes caper. Gonna be giving that a try this season.

It's smaller than I expected, but I can live with that. It was cheap on the EE, so I figured what the hell it's worth a try.

The mora companion are about $25 and have become one of my favs. Also have the little havalon on my bino harness as a second option. Can bone out a deer with a mora and a short minute with the steel and ready for the next. I have them everywhere, trailer, kitchen, vehicles, pack....awesome function and value, hate the boutique steels, so hard to sharpen and brittle etc. Although my daily is one, I spend a lot of time touching that beeach up so I don’t get behind but be just as happy if it were 440c or whatever the mora is

I like Kershaw Hunters... I have skinned out two gravel soaked grizzlies without resharpening. I also skinned out and processed five black bears in two days this past June without resharpening... these knives are incredibly strong and hold an edge. These are the models made by Kai of Japan.

I use a Buck Vanguard with the rubber handle primarily and my dad's old Buck 110 when needed. I also picked up a couple of Canadian Tires Huntshield Whitetail Hunter on sale as backup and to see how they'd work. They've remained sharp, but haven't really abused them.

The companion is a great knife for the price, but I wanted something with a bit more curve in the blade and a bit less pointy, hence my choice of the craftline pro c. Here's a side by side view of both, with the companion on top.

I use a sykco 460. It keeps a good edge and it's stainless with a non slip handle, other wise most knife will do. I prefer a Victorinox Fibrox Curved Boning knife for meat processing.

Victorinox curved boning knife is the go-to knife of choice for my buddy who manages a meat dept at a grocery store. Hard to go wrong if thats what he uses every day IMO.

Great, you and my wallet are going to have a talk. Are these available everywhere also?

Really anything sharp 3.5"+/- blade will work fine. I gutted/skinned lots of Deer with a 3.5" folding Ruku knife I bought at Zellers for less than $10. I prefer bright coloured handles in the field; orange, yellow, etc.

I like the Victorinox serrated steak or tomato knives and a yellow handled zwilling boning knife for cutting up venison.

Powdered steel is not necessarily brittle. Nor is it necessarily hard to sharpen. But it does hold an edge extremely well.

Busse Game Warden for me. I like the size and it stays sharp. I also use to skin out. Later on for processing a Meat crafter goes to work.

I have been carrying some sort of Grohmann knife for the last 50 years or so with no issues. The original Russel belt knife from Grohmann in carbon is probably as close to perfect to a deer hunter's knife as one could get. I carry the number 4 Survival in stainless as well when I am more in bushcraft mode or staying over night in the bush.

Grohmann Knives are Canadian made with pride in Pictou, Nova Scotia!
