I filled a gap once. I didn’t have anything in 8 m/ m. I now have 5 different 8m/m cartridges. Pick something and enjoy it. Can’t decide , well buy choice one now and choice two later.
They do fill pretty much the same role. The 7–08 I got for my wife so we can both go out but I have taken it on my own before.270 and 7-08 fill the same role.
Going smaller a .223 is an obvious practical choice.
For a larger rifle that is actually a step up, the best choice would be a .375 Ruger
The most obvious cartridge to fill both these uses would be 308W. Everyone should own a 308 because it is one of the most versatile cartridges that is also capable of excellent accuracy.I will be hunting everything from coyote to moose and large bears.

I already have a 7mm-08 and 270 so I don’t need a 308 since I could take down any animal with what I have but I’m looking for a cartridge that is more specialized on either end of the spectrum of the game I’m hunting.The most obvious cartridge to fill both these uses would be 308W. I've shot coyotes with 110gr and 125gr varmint bullets and then used it out to 1200yds with 208gr AMAX bullets. The 308 can do just about anything.

Some people like obsolete 100 year old case designs and nostalgia though, so the H&H is probably a better choice for them.
Almost a Jack O’Conner combination there. I remember him writing that if he could have one rifle for the world it would be a 375, but if he could have two for the world it would be a .375 and .270. Throw a varmint caliber into the mix and you’re really starting to cover some ground. Far better than having 50 light rifles that in the big picture do about the same jobs.270 and 7-08 fill the same role.

Lol, keep in mind gatehouse is a 375 ruger fan (no offense intended GH). For better ammo selection and availability, the H&H wins out. Nothing wrong with the Ruger, but you better handload and stock up on brass. - danI’ll have to do some research on the 375 ruger. I appreciate the help

The 9.3x62 and a 375 are definitely short listed on the high side and something like a 223 or 22-250 on the low side270 is fast and flat. 708 is a better 308. If you want something more for bigger game there's some standouts and some newer choices

I have experience with 300wm 9.3x62 and 458wm and they seem to cover me world wide. All are versatile and can hit hard on big game

You should have a smaller case to for varmints. Not that the 270 can't but if you want to save a pelt the 20s and fast 22s and 6s should be looked at as well
With the incoming high BC bullets in 25 cal it will be the next to shine if you want to b on the front edge of a new trend
