Im stuck on what type of scope I would like. Right now im looking at the Leupolds and the zeiss. I want to use a good scope for target shooting with my .308, so im looking at 3.5 -14 X 50 mm will that be enough for ranges up to 1000m???

If you have the cash, look at the S&B PM-II 5 - 25 X 56mm..............AWESOME scope.........well built and top notch glass..................but not cheap..........
Also look at the Nightforce NXS line................... for the money, they are about the best value for you buck...........I would take a Nightforce NXS over the Leupold L/RT...............
The Leupold's are a good scope. The Zeiss Conquest I like a little bit better, and the Nightforce NXS is even better than the Zeiss (But about $500 more).
The only thing you'll have to be aware of for the Zeiss Conqeust is the MOA at about 45. You'll want a 20 moa rail or Burris rings to get some extra adjustments.
I plan on using the Conquest for my .308 rifles with a 20 moa base. I'll be going with my favourite magnification range 6-20x 50mm. Although the 5.5-22 50 mm Nightforce is even nicer. I'll eventually get one of those for a 7mm rifle.
Here's the reticle I plan on using for my .308 rifles. Busy yes, but I still like it.

In my case the Zeiss is going on a DPMS LR-308 aka AR-10. So 400 yards is as far as I'll be able to shoot this rifle due to it's restricted status.
With the bolt action I'm hoping 20 moa base and the above reticle will give me 1000 yards just using hold overs, with a .308 if I really want to. Shooting the .308 at 1000 yards would be very rare for me. 500-600 would be most likely. Either way I'll mostly be saving those long shots for when I get the 7mm up and running (Night force for that one). That rifle will be the long range toy.
