Hunting Camp Prep

I couldn't sleep at 2:00 AM this morning and I had 20 lbs cucumbers to deal with so of course I made pickles some of which will head to hunting camp with us in 6 weeks, did 2 gallons of fridge pickles with onions and peppers and 10 quarts dill pickles, I've got 15 or 20 more lbs comming over the weekend so I'll have to crank out more.

This will be year #49 in moose and elk camp for me and every year it gets a bit harder to get moving but once I get going to old rush comes back and stuff happens in a hurry, soon I'll crank up the assembly line for the pre made meals and I have to do a gallon of beet pickles yet as that is a staple in hunting camp.

Sept 15th will be here before I know it again and man I'm looking forward to that 3 weeks in the bush

Do you mind sharing your pickle recipes? It’s something I’ve tried a bunch of times and never had any success.

For sure no worries for the bucket fridge pickles you need 2 med onions, 1 red pepper, 1 orange or yellow pepper, chopped in small chunks, throw them in the bucket, slice enough cucumbers to fill the bucket I use the side of a shredder that just slices them, fill the bucket and press them down to pack them a bit.
For the brine in a large mearsuring cup or bowl mix 2 cups sugar, 2 cups vinegar, 2 TBLS coarse pickling salt, 1 TSP celery seed, 1 TSP mustard seed, 2 TSP turmeric mix it all together good and pour it over the cucumbers in the bucket and set it in the fridge, take them out and stir them every day for about 7 days and they are ready to eat, I put them out into jars after that and you MUST store them in the fridge, they will last for up to 6 months.

The dill pickles are called easy pickles, stuff the jars with cucumbers, 4 cloves garlic and the dill, add 1 1/2 TBLS coarse pickling salt then for the brine I boil the water and the vinegar pour 1/2 cup boiling vinegar over the pcikles then fill the jar to the bottom of the neck with boiling water, snap the lid on and your done, as they cool they will seal and in a couple weeks you have dill pickles, I have stored them in the basement for up to a year and they are still great.

That's all there is to it, hope you give it a try

I did 10 more jars of dill pickles this morning but like an old fudd I forgot to take a pic of them before I packed them downstairs, :ROFLMAO: oh well that's sort of normal these days for me :poop: I also put the bucket pickles out into jars this morning 6 jars full, that will do it for those but I need some beets to make a couple buckets of beet fridge pickles
