Both are excellent calibers, but the best thing you can do is to just go into the woods and learn the environment that you will be hunting in. Dense forest vs open space , will you hunt stationary or on foot? 25-50-100 yards or more ? etc. Availability of ammo in your area and perhaps the cost per box. The best books or YouTube videos will not replace your own time spent in the bush where you will learn what works for you and what doesn’t.

The .30-06 is more versatile for the reasons others have listed. In the .308, even a 180 grain bullet is a stretch. So if you feel you need a larger bullet, for instance even with whitetail some bush hunters of the big northern subspecies insist that a 180 grain bullet and up is best, opt for the '06 - it will perform better with the larger bullet. For moose i'd opt for the '06. I find i notice the kick of an '06 whereas i don't notice it at all with a .308, so if you don't like kick get the .308 and live with the incremental limitations and you'll be fine. Not that the kick of an '06 is at the level of a drawback by any means, all-in-all also an easy on the shoulder calibre.

Things that it would do that a .308 wouldn't include, but may not be limited to: i) 100 yards more effective range; ii) a round that is optimum with 180 grain bullets rather that hitting its margins at that weight; iii) where indicated, the option of 220 grain bullets. The latter of which will give you i) more velocity retention at range (heavier bullets taking longer to succumb to friction and gravity) combined with ii) higher sectional density meaning better penetration on tough game, whether within .308 range or at that 100 yard point beyond max effective .308 range.
Yeah I just can't see where that would actually be needed over say a 168gr TTSX or 175gr LRX that won't lose any weight and still ends up being a very deep digging bullet if thats what someone prioritizes.
Or a 168gr TMK if someone likes those, which also do a number on non dangerous stuff.
If past 400 yards is really what someone expects, I guess I'll concede that, but with the provision that a flatter shooting gun than either is probably an idea

Just buy the 308 then. I’ve killed a lot of game with both. And I'll buy the 308 and more, probably another 30-06, and some more 6.5s and whatever else I want, thank you very much lol. Maybe split the difference and do a 7mm-08 too, its been a while. What I buy or don't buy has no bearing on the merits of the cartridges

The two cartridges I’ve taken the most game with are the 7MM RM and the 30-06. If you struggle with one or the other you are the problem.
