yup, I normally have 3-4 knives handy when butchering, cut till it starts getting dull then grab the next one, start with all the knives sharp and then do a group sharpening when you run out of sharp knives.

Field work, I have my carry knife and then at least 2 spares, and knife sharpeners all over the place in my hunting kit, just the cheap ones work fine to touch up a blade.

I generally use a Buck Alpha Hunter, and one of those butt plug things. But I have used even a cheap 2" bladed Chinese Buck knife copy. So long as it's sharp, they all work. I have to say though, that when I first started to hunt, all the young guys carried giant fixed blade knives. First time I used it on an animal I found out how awkward those are. Particularly useless for butt hole trimming. And the little 2" knife was perfect for that!
 
i ve been using mora knife and lambskinner from victorinox for years and almost two decades in canada ... but i made myself a gift done by BUM in nova scotia called the german hunter blade with caribou hunter but i did not hunt that much big game recently so not used but still with me when the rifles are taking fresh air ...
 
Lot of love for folders here! I find that surprising. My go to was a Buck Diamondback Outfitter for years and years but I recently got a Mora and love it so much I got a second to permanently keep on my fishing vest. I have a Havalon, they're very handy and silly sharp, I've never been able to trust the folding mechanism on them very much though. That says more about me than the knife though, I've never heard of one failing. They just feel a little flimsy and I'd feel really dumb explaining to the paramedics why I lacerated myself with a scalpel in the woods.

I've done a handful of animals completely with the Havalon. So gutting, skinning, and quartering. No issues as long as you don't try to pry anything with the blade.

I prefer having a heavier fixed blade on my hip as well. But the havalon is so sharp and can be incredibly fast and thin for certain areas on animals.
 
if I am packing it out boning it out on the ground I pack my cheap ass Henkels boning knife I have had for 25yrs

if just cleaning I pack a benchmade bushcrafter or bench made barrage
 
seeing we on a topic of knives...
due to bad arthritis in my hands im thinking of trying a knife with a gut hook to help in field dressing...
anyone recommend a good quality made one

Absolutely.. It's a floor layers Olfa.. perfect for the gut. Just snap off the hair dulled one when you need too. But when it comes to dealing with the whole package it's just part of the puzzle. I carry zip ties to cinch the anus after cutting around it with a nice little Havalon.. I carry a variety of knives and some dedicated cordless power tools at the vehicles.. but in the field.. The hook Olfa, small Havalon, Kershaw on my belt.. water bottles and a roll of shop towels. Cheers

I looked around can’t find a website… I’m interested to look at them.

I know you would likely use different blades on small game like rabbit, grouse and such, so I'm mostly talking about what you're go-to blades are for deer, elk, moose, bear; the bigger stuff.

I've got a Buck Vantage drop point made out of S30V steel that I like to use.
