If the used Remington 700 is about the same price as a NIB Stevens and in very good/excellent condition, I'd choose it for sure since that would be quite a deal even for a used 700.
If the 700 costs considerably more, I might choose the Stevens, though anywhere under $500 for the 700 and it would probably still be my first pick, funds permitting of course.
If the 700 comes with sights or a scope already attached that's even better, since a decent scope, rings and mounts for the Stevens is going to cost at least half or more of the price of the rifle.
