Farmer Sausage

I have had the best sausage guy in the local area try, but it's all for crap. I was spoiled from dating a girl from Steinbach Manitoba. That's where the real good stuff comes from. Everything else is an imposter. I was sad for a while.

heres what I have and make !!!if you want any of the recipes let me know Ill write them out on Monday when I have a bit more time. I also have over 40 other recipes if your interested, have almost any kindIf you want a recipe just let me know :)

Bauernbratwurst ( smoked farmers German style)
Italian farmers( very good has 3 cheeses and spinach yummm)
German Farmers ( summer sausage style)
Mennonite ( true farmers sausage)
Grossetto (very nice breakfast has potato and pork rind) yummm
Bauerwurst ( lightly smoke raw farmers sausage)
Boerewors (african farmers sausage )
old fashion farmers( very plain )
 
If you could share the recipe for the Mennonite farmer sausage it would be much appreciated.:) I remember mom and dad used to get some from a place in Warman when I was younger, but the business must have changed hands or ??who knows. After that not so great.

Is your version a drier type sausage? The above mentioned sausage took a nice browning in the pan, the ends crisped up nice, and it was dry but delicious.
 
I have one that is all venision with a bit of beef fat and one that it venison with pork and beef browns up soo nice and man is it ever taste ill post both for you :)

There is a little place just North of Warman called Neuanlange (or something like that) that used to have Mennonite Farmers sausage for sale.
 
Ok heres the recipes :D

this one is very lean:)

5 lbs Venison
1/2 pnd beef fat
2 tbsp ginger
2 tbsp nutmeg
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp pepper

great fried ( fatty but soo good)

5 lbs Venison
1/2 pnd beef fat
2 pnd pork roast ( very fatty one)
3 tbsp ginger
3 tbsp nutmeg
1 tsp onion powder
1 tsp garlic powder
1/2 tsp pepper

will post a few more really nice ones tomorrow or later tonight :)
 
here the other Mennonite recipe I had to get permission from my aunt to post it as it her recipe :) hope you enjoy this one is great smoked and then boiled for about 20 mins in boiling water great on crackers this is a must at christmas time :)

8pnd venison
1pnd beef fat
2 tsp caraway
2 tsp fennel
3 tsp ginger

1/2 tsp all spice

Could you post or pm me the Boerewors recipe please, just typing this email has me salivating, and dreaming of red hot coals, a wire grate with a juicy brown borewors splattering away, just before it pops into a bread roll ...........
 
10 lb venison
3 lb beef fat
4 tsp salt
4 tbsp toasted ground coriander
2 tsp pepper
1 tsp garlic
1 tsp ground cloves
1/2 tsp tyme
1/2 all spice
1/2 nutmeg
11 tbsp red wine vinegar
4 tbsp Worcestershire sauce

Do a light "wet smoke"(no heat) for 4 hrs then a 1 hr "dry smoke"( heat)
these are sooo good they are still partly raw so you will need to cook them a bit
mm over hot coals is the best
