Loin roast with half the lengths of ribs attached. From this past Spring's bear, it had been smoked for two hours before going in the freezer. Tomatoes, onions, celery, garlic, salt and pepper, water, three hours, covered, at 300F.

Had some first-timers over for supper Friday night. Marg served it with sweet potatoes, carrots, and corn. They couldn't believe how good it was. The guy ate until he was so stuffed, he could hardly move! :D

spring / fall

friend of mine & his dad gets his bear every year , they both say the spring bears get up & eat grass , berries ect. for the first 2 weeks . they taste great,just like a big pig. the fall bears eat fish, meat ,garbage ( in some cases) give it a terrible taste . In their minds its fall bear for trophy & spring bear for eating. anyone else hear this?
of course in the spring they look for younger bears & fall older. this would also make it more palatable.
 
We find that both Spring and Fall bears are excellent eating. Having said that, we don't shoot bears at dumps, and by the time we shoot them in the Fall, the early salmon runs have been over for a month, and the chum salmon run won't be starting for another month.

So, all our bears have been feeding on grasses, roots or berries, when we get them.

Ted, you are practically a vegetarian! Eating meat that was fed on grass and granola (fruits nuts and flakes), and then covering it in veggies..............

Next thing I hear you will be up there stalking tofu with your .358 Norma........

Any comparables with other animals? I've never eaten bear but I was served a drink in Mattawa with a weird looking swizzle stick. When I inquired I was told that it was a "bear ####-bone." I'm still not 100% sure they were serious...

We had soup a few days ago, made from the bones left behind after carving the meat off for supper. Celery, onions, tomatoes, a few cloves of garlic, salt, pepper, covered and simmered for about three hours, then a handful of pasta thrown in for about fifteen minutes..........it was wonderful! :D
