they do... just not normally those ones.

most lever actions are better suited to low(er) pressure, rimmed cartridges.

there is also the problem of pointed bullets in a tube mag, though this has been remedied with the advent of rubber/plastic tipped bullets.

you will find some of the more modern designs, like brownings blr are commonly chambered in 30-06, .308, .270 etc.
 
Thats why I own 3 Savage 99 levers. 308, 30-30 and 250 Savage all with pointy boolits. I think Browning makes it in 30-06 too, certainly 308.

I have a 99C in 308 with detachable mag and its a great rifle. I wish my grandpa hadent sold his 99A as it was a beautiful gun.
 
Browning makes a really good lever action with removable mag. very dependable and less the problems of tube magazines.
 
Traditional levers were designed with lower pressure rimmed cases in mind and are not compatible with high pressure rounds with the exception of the excellent Savage. They also are better suited to short cases(.308,.243,.300 Savage etc.) I think it is also easier to build an accurate rifle out of a bolt action than a lever, one piece stock, easier bedding, better triggers etc., just my opinion.
 
There is also the .307 and .356winchester that a few tubular mag guns were made for.

they are rimmed, blunt bullet versions of the .308win and .358win respectively.
