What knife do you use?

I'm of the 'whatever's on hand' camp, but that more often than not ends up being a Buck 102 (i think that's the number..like the 119 but little) for in the field. I like the agility of a small blade. Anything with a nice deep belly for skinning.
 
I have an Old Timer folder that I carry with me while hunting,this ussually does the quick field dressing.For the skinning I keep a knife I made out of a planer blade.It's ugly but I used it on three moose one year and it was still razor sharp.It stays in my truck as I don't have a sheath for it.I'm going to have to make a new(prettier) handle for it anf get some kind of sheath.
 
I used a sog field pup for three years now , easy to sharpen and holds an edge . Did 5 deer in a day with it but after a while had to pour boiling water as the fat of the deer lepta slowing the blade. Any one else have the problem with the animal fat cloging things up?

Yep! It gets everywhere, while skinning I use paper towels to wipe my blade, when butchering I wash my blades in the sink when they get all fatty.
 
Here's what I've been using for the past couple of decades:

The skinner originally had a 'white' blade but I put some cold-blue on it back in the '90's and the other one is a "Craftsman" butcher knife*. I drilled a hole in the end of the handle to keep it in the sheath. When I'm not out in the field the butcher knife is in the kitchen, it gets plenty of use.

*Ja, Craftsman, just like the sockets from Sears. There used to be an etching on the blade saying "Chrome Vanadium Steel" or something like that. I'm very pleased with the steel and occasionally consider finding some more on eBay.


I cut into a piece of cardboard, usually gets most of it off.
The cardboard trick sounds like it would work and be quick too. I'll try to remember it. Thanx.
 
For moose or big jobs I rely on my Steve Price custom skinner and caping knifes (both in D2).

Also have Zero Tolerance knives, Kershaw, old timer, Buck, Busse, Rat-Ontario-Esse...Almost any knife will do on a deer.....Though it is amazing how fast junk steel dulls.
 
I own lots of knives. My dedicated fishing/fillet knives are a Grohman & Rapala. My everyday carry/hunting/fishing/work/the Keg's knives are too damn dull knife is a Gerber Freeman. I doubt I'll ever kill this one but if I do I have a spare. I could not be happier with a knife. I really do feel this one is perfect for everything.
