Somewhere I received a video clip of a mechanized skinning technique for deer. Hitch the head and neck to something solid (or immovable), cut off the legs at the knees, cut the hide around the neck, and snag a rope around a tennis ball inside a pocket of hide up on the shoulders. Then slowly drive another vehicle away with the hide in tow. I suppose a winch would also work.
Where this applies to the original question is how to remove a hide smoothly and without nicks or hair left behind.
