Bottling Ducks

Just wondering if anyone has any experience or recipes bottling duck. No moose licence this year, and had a bountiful duck season. I have bottled moose,rabbitt,caribou,salmon as well as seal but never duck. Any and all tips would be appreciated.

I have never done it, but my cousin has...well chicken wings that is.
I would look up a recipe on bottling/canning whole chickens and maybe add some fav herds and spices(pepper corns even).
I bet you will be pleasantly surprised.
Ease up on the salt though, as you can season when you go and use the meat.

I bottled goose this year. Do duck same as moose and you should be fine.

I have bottled ducks (as well as turrs). Just the breast, though, and no skin. I found that the skin makes it very oily. Use a meat cleaver to chop the breasts up so they can fit it the bottle. Boil down the same as moose.

I have been trying to get the time to do a duck confit in a jar. I bet it would work well.

Yup, I just did some the other day, came out great. I think the legs are the best part. If you leave the skin on, you can take them out and roast them until crispy. Add some garlic and thyme, salt and pepper and you have duck confit ina jar!

That video with the cabbage looks good. But if you want to preserve it, you will need a pressure cooker!

You guys call it 'bottling'? I've never heard 'canning' described that way.

I have had "canned" venison before. Was delicious, drop the contents into a sauce pan, seasoning and some fresh mushrooms. Makes it's own gravy, serve with mashed potatoes and a veggie...quick delicious meal.

As for duck, I can't see that it wouldn't be great.

Thanks for the tips guys, I wanted to bottle the ducks because i don't have the patience to pick them all, was just goin to skin em. Upon further inspection and cleaning of the freezer in preparing for a quarter of dad's moose, I found some turrs and sal####er divers from an earlier trip to the labrador coast. Gonna bottle up some moose and rabbitts at the same time. Haven't broke the good news to the wife yet, that she will be recruited as chief bottle washer!
