A buddy of mine and I were discussing what our "favorite" hunts were. We both agreed we loved blacktail deer hunting, any alpine hunting (sheep, goats, mule deer) but grizzly hunting is very up on the list, because it is a great adrenaline rush.
In North America, the grizzly and polar bear are the only true dangerous game animals that we can hunt (although everything can be dangerous, given the opportunity)
Looking at Africa, there are lots of big and scratchy or good stomping animals.
I've never had a desire to hunt elephant. leopards are scratchy but rarely fatal. Buffalo, hippo and lions seem to be the ones that kick some ass if you aren't into elephant hunting. The only one that actually makes me wonder about it in a charge situation is the lion. They are very capable of killing a human with one swipe of thier paw or bite from their jaws, and they are sooo fast!
Judging from cougar hunting, cats are fast, smart and mean, although not that tough. A lion is like a cougar on steroids, so that is the only animal that I think is actually spooky...
I doubt I will ever hunt lions, though. I'd only want to hunt a big mature male with a big mane, and it appears to me that most are on the decline.
