Pre rut...YES! There really isn't a post rut for bucks until/nearing the end of December.Even then the buck has been run ragged. A doe might be fine,provinding it isn't in heat. It's a gamble either way. Like you said...Preparing, and aging the meat that you get properly is by far the best way to have tasty meat in your freezer.
If you have no way to age properly(18-21 days) it might be best to sausage, or pepperette a rutting buck.
