I am trying to establish a price for an M1 in non issued condition. The biggest problem I am having is finding others for sale to come up with a fair market value. Any suggestions ?

I'll give you $5 for it :)

... you could try researching forums in the US. Probably a little bit bigger market there and you may be able to find more examples.

Any idea of the maker? If it is USGI or an aftermarket one made for the civilian market? Original configuration M1 carbines made for the military vary, seen them run between $500-$800. Early features are more desireable (highwood stock, flip sights, push button safety, ect).
There are some really great CGN members here who are experts on the M1 carbine. They probably frequent the Milsurp board mroe than here. Good luck! It's a great beauty the carbine!

Non issued condition as in modified or unissued condition as in not used since built? Find out if it is USGI or commercial built, unissued USGI should be worth quite a bit , but from what I know most USGI carbines have been arsenal rebuilt before, finding one unissued would be a rare find these days.

War era non issue mint like above picture starting around $1200

Used and abused version of same $450-$600

Post war civi in decent shape $500

Someones old trunk rifle with bad finish and rough stock $300

M1s are quite sought after in today's market and are very collectable

"...mint like above picture..." That one isn't 'mint'. Been refinished, at the very least. Most likely a commercial copy. No offense hunterhenderson.
99.99% of all carbines went through an arsenal rebuild after W.W. II. The chances of finding a real, issue, Carbine that didn't go through the rebuild are exceedingly slim. Most, if not all, in that condition, have been made that way by somebody with lots of time and money.
"...researching forums in the US..." U.S. values mean nothing here. However, as mentioned, more info is needed. Starting with the make.

Us prices mean ZERO in canada

I own 3 orig irwin pederson m1 carbines that would each fetch several K$ us

but in canada they are just another m1 carbine

as for being unissiued NOT very likely they were used in ever conflict from ww2 to vietnam and beyond they were given to many us allies

"mint"... As in clean wood, strong finish, matching numbers and tight action... Haven't seen a M1 like that in person but there was a M2 a few months ago that was damn nice.

"..."mint"...As in..." Mint means unfired as it came out of the factory. None of the manufacturers made all of the parts, so if anybody says it's an "all IBM" or whatever, they're BSing.
