If you had to buy or build one rifle to hunt big game and target shoot medium range steel all day (300-600 yards) with what would you run?

For me it'd be a Model 70 CRF SS .280 AI in an EDGE stock with a VX3 3.5-10X40 with an M1 dial.

This isnt a "what is your dream rifle" question. Just a good solid well built rifle and scope you could see yourself using for years and years.

Don't even need to think about this one. Mauser 98 or Model 70, .375H&H, Zeiss Diavari 1.5-6x42 with illuminated #4 reticle.
 
Bill Leeper is building me a 7MM Mashburn on a LH Classic Model 70 action. It will have Williams bottom metal, 24" Douglas #2 barrel, Echols magazine box and follower, Echols EDGE McMillan stock, MRC trigger, modified ejection port, Leupold DD rings, and either a Leupold 3.5-10X40 VX III or 6X36 FX II.

I could live with that for a while.

Tikka T3 Lite SS in the .338 Win. Mag. with a B&L 2.5-10. Shot everything from muskrats to coyotes to elk and moose. Wonderfull light gun that you can carry for weeks without getting tired. Using the 200 grain Ballistic Silvertips, even my 14 year old son shot an elk this year with it. He shot one last year too. Recoil is just fine.
That's my one and only setup.
 
If I could only have 1 big game rifle, I guess that I could sell all my junk to pay for it? In that case, probably a Echols or David Miller model 70 in .375. I'd probably stick a VX-7 on it since I'd only need one.
 
I don't know about the rifle or chambering (.30-06; .338 WM), but the scope would probably be a Victory Diavari 2.5-10x50 T*
