Would adding a stock on a grizz 8.5 with a (rear) pistol grip would still be non restrcited (considering that OAL is over 26'') ?

Also, does the thing holding shells on the side changes something to its classification ? (non-restricted)

Nope on both, if it is a collapse-able stock you would just have to ensure that it did not go under the 26". As for the shell holder on the side, the only change is it's level of awesome ... higher!!

Where did you get that pistol grip forend?

It is one of the generic CanadaAmmo foregrips. I took the stock foregrip one off and spent about four hours with my dremel to copy the internal shape to make it a perfect fit.
