1 grouse - want to impress

Well, grouse breast is very lean/very nice..fine-textured, etc. I like to cut the breast meat into chunks roughly 1" square. Then, take 1/2 a strip of bacon and a cutting board...and using the back edge of a butter knife, scrape the bacon to thin it out/elongate it. (removes a little fat too) Then, wrap the breast meat chunk in the 1/2 strip of bacon, and secure using a bamboo skewer that's been soaking in water for at least 20 minutes. Season with fresh, cracked pepper...but no salt~the bacon has enough of that. The skewered grouse/bacon nuggets get cooked on a charcoal grill, indirect, with a nice chunk of apple wood smoldering away. (red oak is a good substitute) You don't want to burn the skewer, burn the bacon, or over-cook the grouse.

First grouse I cooked this way~my kids were almost fighting over it...even my wife liked it. And that's saying something!
 
Cube it up into little pieces and make a chicken soup out of it. Then everbody can have some... speaking of that I have 2 in the freezer i forgot about.
 
It's funny because monday I was holding a deer tag and walking around with a 30-30 there were no deer to be seen. But ffs I saw at least 5 or 6 grouse that day.
 
Ruffed grouse breast nuggets and scallop fettuccine alfredo with angel wing mushrooms and bacon. Don't get much better than that ;)

I got quite a few ruffed grouse this year.

Fillet the breasts off the bone of one grouse. Cube it in 1" or a little larger cubes. Heat pan but not too hot with some olive oil. Roll cubed meat in some poultry spice and put in pan. Add diced bacon and Cook a little (don't overcook the grouse and dry it out). Then add the package of frozen scallops (Pre thawed) and cook a little more till nearly done. Add a jar of Classico or Presidents Choice Alfredo Sauce (Whatever flavor strikes your fancy, there is more than one) Add some chopped green onion, and I added angel wing mushrooms that I had previously picked and prepared. (take freshly picked angel wing mushrooms. Rinse clean and then pat dry on towels. Let dry overnight. Next day dice them and fry them in sesame oil till done to desired point. They can then be put in small portion containers and frozen and will keep well for long periods. Thaw a container and add them to any dish you want. I use them from my morning omelets to soups, as a side for dinner. You imagination is the limit. They are my favorite wild mushroom)

Then simmer till done and the alfredo sauce is up to temperature. Have fetucini noodles done, drain and drizzled with some olive oil or sesame oil and keep warm till ready to serve. Then plate by adding the grouse/scallop/alfredo sauce to the noodles in the pot the noodles were cooked in and mix them together to coat the noodles. Then plate and serve warm. It is an amazing dinner. I just thought it up and it came together very, well. Simple to do and tastes amazing. Serves 3-4 people. 2 people if you want to feast like a king and don't want to share ;)

There are some amazing sounding ideas here I need to try!

It may not be as fancy or exotic as some of the above, but if you marinate the breasts a bit & grill them hot & fast then slice them up they go nice in fajitas and nachos. Try squeezine some fresh lime on when grilling.
