1911 Grip Technique

So, here's my stupid question. I just purchased my third 1911, this time an STI Spartan. I absolutely love this gun!!:)
However, when I assume my two handed hold (both thumbs pointed forward) and my shooting hand as high up as possible (smack under the beavertail), I find that the safety is interferring. If I keep my thumb below it, it feels weird; if I rest my shooting hand thumb ON the safety (it appears to be an extended size safety), it causes my hand to change position just enough to disengage the grip safety, causing the gun not to fire:(
I don't remember having this problem on my GI spec 1911's, and I sure do not have that problem on my Glock. Should I be resting my thumb under the safety (when I do that, I usually end up engaging it:confused:)
I've researched grip technique - I think I have it down right...any ideas?

both feet facing forward, shoulder width apart... place the shooting hand thumb ABOVE the safety... place the other thumb (pointing forward) along the slide (even touching it)

worked for me try it out.... feels a little wierd at first.

This if the method taught by Todd Jarret in the video in the link I posted above.
 
Some people teach the method of thumb below safety, with the weak hand thumb behind the base knuckle. This is a sure way to lose some skin off your hand BTW (as I tried explaining to some people, BUT, they decided they knew best and were looking for band-aids after....)

the Todd Jarrett video is excellent, the strong hand thumb over safety, and weak hand thumb just below it, riding along the frame, pointing in the direction the gun is, is the proper and safe method.

Thats my whole issue - that is HOW I shoot!! However, when I do that, the grip safety disengages, thus preventing the gun from firing. No matter what I do, when the thumb rides on top of the safety, it forces the palm of my hand out just enough to cause the problem. I spoke with Gunnar, and he suggested we pin the grip safety. Maybe that will help...
 
Pin it or make it lighter. (trim /polish the rear of the bow so it makes it go off easier)
