1911

Agreed, lots of options especially if you are looking at used pistols. I really like Springfields, every one I've owned has been second hand with the exception of my first. Good old Colts can be had for under a grand too. The price usually creeps above your mark when you add in models that are more "modern" than the original design from what I've seen.

The sky is the limit really, decide what you want for features and go from there.
 
$1000 is kind of a sucky area to be in. It isn't quite enough to get something really nice, and its more than you should be paying for any Ruger, Remington or old used Springfield or Colt (I have owned all these brands). I would almost say to save a bit more and get yourself into a new Colt Competition or Rail Gun, etc. You can also get a good new Springfield for about the same price as the new Colts.
 
Some decent priced 1911's on the EE. Prefer Ruger SR 1911 myself. Depends on what you want it for. If just messing around with $1000 and under will work. If your having thoughts of competition, Saskcop's advice is good.
 
A lot depends on what you plan to do with it. If you're shooting in a discipline (IPSC Classic Major, 3-gun Heavy Metal, SASS Wild Bunch, etc) then the fine print on what's legal in a particular competition and the more ambiguous wisdom on what makes a gun optimally competitive all come into play. If you just want to plink then what looks good to you is all that counts. With the variety of 1911s out there, it's probably better to find something that fits your intentions out-of-the-box than plan on customizing too heavily.
 
There are a lot of 1911's around and they depreciate like cars. Best bang for the buck is lightly used. Lots of good brands as mentioned about. I'd be partial to Springfield (like a Range Officer) in your price range. You might find a used Colt Competition in that ball park as well. If new is a must - I'd look at the Ruger probably.
 
Assuming this is “just because”, at $1000 a gently used Springfield RO or Colt Competition will be hard to beat. Buy the one with the sights you prefer.

I am using an STI Spartan, only modifications I made were Pachmayr grips and a 3.25 lb trigger pull.
 
There use to be good deals on solid 1911's, I'm still running an STI Spartan 45 commander that was $650 new and it is really accurate.
Have 3 SAM's, all were under $500, fit a bushing and that's all, and they are also very good...9,40, and a 45.
If I was dropping $1000 it would be a SIG or used STI.
