theoretically,

i have a T3x SS 243, a sako 85 grey wolf 308, and a T3x SS in 7mm Rem Mag.

have to shed one, what do i keep, what do i shed.

mainly hunting, nothing bigger than moose/elk.
 
I wouldnt choose the 243 as the preferred cartridge for the elk or moose, and out of the remaining two I consider the 308 as my favourite for an all around cartridge.
 
243 is perfect for predators and deer, 7 mag is what I’d consider the near perfect all around big game cartridge. Matching rifles is a good thing and the tikka is nice and light. The sako 308 is the porky sister in law.

sell the 7mm magnum, over kill; too much recoil
I sold all my magnum, and will keep as non-magnum
magnum has made me loss of lots of bears and deers, and once I switched to 243 and 308, I am much much better.
 
If your hunting is restricted to deer and larger critters, then the 243 offers no advantage over the 308. Ever see what happens when you shoot a deer at 50 yards with a 7 mm mag? So, lose the 243, use the 308 for deer, and 7 mm mag for anything bigger or more dangerous. The 308 can be your backup gun for the 7 mm....
 
What is your typical shooting distance at large game?
If you're not taking shots beyond 300 yards, I'd stick with the .308. That Grey Wolfe is the Cadillac.
Per Hoyts #2: keep the .308 and sell the other two. Buy a backup beater.
