2019 spring bear is almost here!!!

Bears go into hibernation with fat stored in two types, marbled and sheathed... marbled fat is stored between muscle fibers within muscle groups, sheathed fat is layered on the outside of the muscle groups under the hide. Over the course of the winter, the energy is drawn from the marbled fat first, leaving the sheathed fat for later consumption. This results in much leaner meat within muscle groups... bears often exit the den with much of the sheathed fat still intact, but once the sheathed fat is trimmed away, the meat is relatively lean compared to a fall bear, because in the fall the reverse is true, fat is stored within the muscle fiber first, and then begins to sheath, so fall bear meat will be more fatty... unless you run into an unhealthy bear that is not properly storing fat.
