I know you're considering the possibilities within the three calibers you listed. Others have suggested a 243, perhaps others might recommend a 220 Swift. If you're varmint hunting, you're going with the right approach - the right gun for the right job. Let me toss another log onto the fire, perhaps you'd consider a 204 Ruger.
I, like you, want a gun specific to the job. I've shot, and seen coyotes shot with 308, 300WM, and about everything else. If you want to keep the pelt - go lighter. In the case of the 204, it's the fastest production gun out there (Hornady 24g Superformance is aprx 4250 f/s). It's a light bullet, but the speed is ridiculous! Speed means less bullet drop, which means you can shoot on the fly. If you zero at 200y, then you make a tiny adjustment for bullet rise at 100, or drop at 300. No matter, you're within the vitals from 0-300 yards with essentially the same shot.
If there was a 'best' caliber, there'd be only one gun....people have their favorites. Look at the Savage 10 Predator Hunter or a TC Predator.
204, 220, 223, 22-250, 243 - have fun! (I'd shy away from the 270 for little varmints).
