7.62x51 in a Rem 700 .308?

actually, you can go either- you just need to be a little "softer" in the 7.62x51 chamber and throw the brass out earlier- 4 and out instead of the usuall- and keep it BELOW 180 grains- which you should anyway, as the bullet sits in the powder column when you get over 180 grains
basically, it works like this; the chamber for the '51 is ever so slightly longer and the brass stretches enough to fill the difference- the '51 is loaded to 50kpsi, whereas the 308 is loaded to 62kpsi- so the 308 is a little harder on the action- however both are proofed to well beyond those pressures- if you're doing load development, you will encounter PRESSURE SIGNS long before you get anywhere near those pressures anyway
if all you could find was m-14 data in a search, you didn't look very hard-it's the m14 data that's hard to find, not the 308 winchester- it's in EVERY reloading manual and on the net
as far as factory ammo goes, you can tell by looking on the side of the box and comparing that velocity to your reloading page-VERY FEW, if any load to maximum pressure and velocity for liability reasons- they tend to load either middle or low end b/c of the rebarreled spanish mausers and other such wierd configs out there
