A simple, reliable sxs

Only SxS or hing acton guns that I know of with easy access to the internal workings, would be a true side lock. They have pins on the side plates that can be removed exposing the workings. But a true 7 pin side lock is extremely $$$$

Not always. I have seen a few Spanish doubles on the EE that were 7 pin sidelocks for under $700.00. I bought two. There are a lot of people who "walk away" from Spanish doubles from the late 60's to the 80's because of reports of "soft" metal. I have a number of these Spanish guns and none have been an issue. They will last the typical hunter a lifetime.
 
If you can find one get a Rossi overland coach gun. External hammers, good finish to the metal and the wood is not to bad. Google Hickok 45 and watch him put one to the test. They come up every now and then on the EE. You won't be getting mine, it's my cowboy action shotgun and I use it more than my model 97.

A Stevens 311 has relatively easy access to the internal workings.

I have two near "best" gun sidelocks, one from Paris and the other Prague. Because they are not English and come from smaller, less well known makers, the total cost to buy BOTH was under $4000 Cdn. Less than $2000 each. I've been offered $4500 USD for the French one by the owner of a well known US vintage gun shop. He knows of and has experience with other guns from the same maker. Stocked to the fences, incredible engraving, gold washed internals, excellent working condition, both good solid guns.

Sidelocks can be very expensive but they don't have to be.
 
I once had a Stoeger Uplander and it was a fantastic gun for the $275 bucks I paid for it used. Definitely regret selling that one.
