Can the 8 round magazine of 590A1 be plugged to only accept 2 shells and thus make it legal for hunting? I wish I could take my new Mossy into the field for deer/bunnies etc.
I know I could possibly replace the mag tube with model 500 5 round mag tube and then add different barrels but I would rather keep the 590a1 as is but make it legal to hunt. Is it at all legal to plug 8 round mag?

The easiest way is to use the plugs. Use two or two and a half plugs.

that sounds easy enough, but my real question is: are those extended 8 round magazines legal in the field for hunting even thought they are plugged properly to only accept 2 rounds in the mag (plus one in the chamber).

Yes they are legal. Most Mossberg guns are plugged with a 1/4" dowel with two small o rings on it to dampen the noise. Just make a longer one which only allows you to put 2 of the longest shell lengths that the gun is approve for. Take off mag cap and slide it in the mag.

A 1/4 inch diameter wooden dowel from Home Depot will do just fine.

Adjust the length as needed, so only two rounds will fit in the tube.

great, thanks for the answers. I thought I would limited to my range and home defense (which means zero practical usability).

I might be mistaken but the 2 rounds limit in a shotgun are only for ducks and geese. Maybe it depends in which province you are hunting!

It's to do with the migratory bird act. Don't let them catch you with shot shells in your gun and more than 2+1. All the above comments about plugs and dowel will do the trick.

Ok, so that I am clear, in Ontario, if I want to hunt bunnies with my 590A1 with shot shells and the magazine plugged to only accept 2 shells, I am still OK, correct? Cintax mentioned "don't let them catch you with shot shells and more than 2+1". I think the type of shells doesn't matter (shot or slugs) as long as it is no more than 2+1
The reason why I even ask about this is that i read on some forum that the length of the magazine (8 rounds) automatically makes it illegal for hunting even though the mag is plugged. I need to check with the officials though to be sure.

As long as you can't put more than 2 shotshells in the mag tube you ARE legal to hunt. You should check the regulations though for maximum shot size depending on the species or areas you wish to hunt.
