Advice on cleaning larger game...

Im not much of a hunter, but I want to get more into it, i have been on hunts but my brother usually did all the cleaning of the animals. My questions is, is there a course or a dvd series that one could get to learn how to clean most bigger game. I think i can manage a rabbit, but im talking deer, moose, elk, etc...
 
While I have yet to learn how to do it, check out the "gutless" method for big game, especially the larger ones like moose / elk.
 
There is a really good set of dvd's out by outdoor edge. You should be able to find them at bass pro shop or places like that. the guy is awesome and reapeats alot about what to do but very informational. Just a warning though there is a fair bit of advertising in it.
 
Gutting and cleaning is the easy part.
Butchering and getting to know the finer cuts of meat that are worth separating for steak and better roast, and not be put into the grinding pile is the real challenge.:)

If i can get to the point where i get it cleaned, quartered up and brought out of the woods, then ill be happy to pay somebody else to do the rest :D
