So... collaborating with the roommate tonight resulted in this:
Recipe -
One whole Chicken
1/4 cup of butter, shaved into very thin pieces.
Crushed garlic
"Spices" (Italian and Greek quick spice works)
Separate skin of chicken, insert butter and ground garlic into the gap between the skin and the meat
rub skin outside with a tiny bit of olive oil
Sprinkle herbs and spices all over
Put in roasting pan Raised off the bottom of the pan. 1/2 inch-1 inch is best so you can get good crackly skin on the back as well as sides and top
Roast for 30-50 mins at 350-375 degrees.
Eat delicious crackly skin and soak meat in the pan drippings.
Make stew from the carcass............. yummmmmmmmmmmmmmm
