I think that most modern handguns should work fine for IPSC left or right handed. I think that you should try a bunch of different ones and find the one that fits your hand best so you can have a good grip and smooth trigger pull. I think they are more important and core to proper shooting than the ambidextrous features. But given the number of manufacturers adding ambidextrous features for Southpaws, stages involving weak hand transitions or to meet a agency/military/police specification you will likely have some on the handgun that fits you best.
Finding good left hand holsters I think is far harder unless money is no object and you can get one custom made. If not you probably will have to special order some left hand holsters through a dealer. So be prepared to wait.
