I think you're probably a month or two too early. We were out coyote hunting last weekend and saw about 20 mulie bucks, all still with antlers. I can't speak for MB, but I've noticed that most bucks don't shed their antlers until late Feb. or March in southern Alberta.
Most whitetail here in Manitoba carry their headgear well into February. Have seen many sporting antlers in March as well. Best time to search for them is in April when the snow is all but melted but things are not greened up yet.
friends of mine have been feeding some deer (the food is only at the end of thier deck) and the 5 x 5 buck was there with headgear on Dec 27 and on the 28th he came back with no horns. They haven't found the sheds yet.
I find the deer normally hang on to them until mid to late Feb but some will drop earlier. It keeps a guy going out because you just never know...
last year in late February i got 2 of them (did not match) but also same day last year seen 1 buck with them still so? i think this year i am going to wate till late march befor i go.
I Know when to look for sheds, been at it for 25 years and counting . I have picked up sheds as early as Dec.27. My daughter and i found a nice 4 point set today.
Our local deer are still sporting antlers from what I've seen. Also came across three young bull moose on the winter access pipelines yesterday and all three still had their racks...
Oddly, I found a descent shed(last years) while dragging a deer out this last fall during ML\SG.

ive seen deer that have droped as early as dec 10. it was one day after the season. i between me and my buddies we had 5 or 6 sets before dec 28 that year. (2006)
I always thought it was in January sometime, good to the bucks have there headgear still. There is a buck on my property that I have to find. But going in the spring time might be easier seeing all the snow that we have got so far...
