Anyone here eat groundhog?

My grandpa and his brothers used to go out and shoot the young ones when they could not find enough rabbits. The rest of the family could not tell the difference. Remember, the groundhogs eat the best grasses, why would they not taste good.

Eating Groundhogs

Years ago I used to hunt in the mountains in August with some of the guys from the local reserve. ( I reloaded their .222's and .223's so I think that is why they asked me.) They used to hunt marmots which they referred to as groundhogs. They would skin and gut them, lay them out on little willow frames, and then smoke them. It has been quite a while since I ate one but as I recall they were quite palatable. Much better than the muskrat we ate one winter.

Best time is August when they fatten up for winter.I've had them at the farm here but I shot em all over the years and haven't seen one for a few years.
They taste very close to rabbits but meatier. I like them braised in a slow cooker ,excellent. JITC

my father who grew up on the family farm in Cannington,Ontario, said they prepared it just like rabbit-in fact called it''field rabbit'' when serving it to company

Apparently the best way to prepare it is to hang for 48 hours after dressing etc. (watch for about 7-9 glands under the forelegs and cut them away, these will taint the flavour!), then brine it over night, and then there should be no difference between it and rabbit.
