One thing I was thinking about was the coat; maybe a Drathaar would be a good choice because of it's wire hair? I would think it would keep a little warmer retrieving in the water in the fall than many of the other pointers.
Coat length is only one of many factors that affects a dogs tolerance to cold water retrieving. I've seen wire coated dogs who would balk at cool water, and short haired dogs that loved to break ice all day chasing late season birds. Muscle mass, body fat coat density and coat length all have a role to play in a dogs tolerance to cold, but the biggest factor is drive. You can always put a neoprene vest on your dog in the late season, but if he doesn't have the drive it doesn't matter one bit how long his coat is.
