Are old bucks just good for sausage?

FWIW, most of the commercial butcher "game" salamis I have had taste like cheap safeway salami.

I think the best game preperations are fresh sausages and jerky. Most pepperoni is usulaly lacking, too.

I've had some homemade stuff that rocked, though...

grew up eating venison .process all my meat at home.skin it asap to cool the meat,and get out any blood .wash off any hair .hang it for 2weeks
fawn=veal
doe/buck=prime beef to me
this years buck scored 158 3/8 enjoyed steak off him this evening very tasty!!!my neighbor that doesn't eat venison thought it tasted great .I'll tell him tomorrow .non marinated round steak.

only time i have had "bad" tasting meat was from a buddies deer(doe) that was wounded and then ran long distance.2 1/2 mile i tracked her .the adrenalin makes the meat taste a strong taste .highly stressed beef ,pork will taste just as bad if not worse than any old ruttin buck ever will.
