Just a thought to go along with what Rick said. There are various rifle actions that have 3 instead of 2 screws. Almost invariably, they are more accurate when the centre screw is not installed. Basically 2 mounting points allow for a straighter action. I imagine that the same principle applies to scope mounts and number of screws.
