Not a game recipe, but thought that I would try my hand at making bacon. A friend hooked me up with a 5 pound (plus) pork belly. Using Eldon's bacon rub. Decided to add some black pepper, extra maple syrup and tyme. Here it is today after five days in the cure. I plan to dry and smoke it this weekend. Cheers, Rich

Yep. I sliced and vaccum-packed about two pound. I'll take it up on my Timmins fishing trip in June. Most of the remaining slices were ate by my friends 17 year old daughter. Next time I might lose the maple syrup. Not that it was bad, it was great, but I just don't favour it sweet. Smoked it with hickory for a couple of hours, then let it stay in the smoker at about 130 for a few more hours. No water like you get when frying commercial bacon. Try it, you will never go back.
 
Just finished a 6lb pork belly. Cured it 7 days, then applewood smoked it. Was away for the weekend , so froze it. Haven't tried it yet. Would post a pic of the finished product, but don't know how. Also did about 9 lbs of peameal. Looking forward to this weeked, when the kids come home!!!!!!!!!!!!!

Not proud of it but I once ate a kilogram of that harvest thick cut bacon in one sitting when I was somewhat drunk. My love for bacon can surely topple mountains. The only thing I love more than bacon is that Hayden Panitierre girl, I would wreck that chick or die trying, lol
