I am curious about painting front or rear sights for higher contrast.

What kind/colour of paint should I use and what method should I use for applying it? Mainly looking at Red Rifles here.
 
If you paint it, put a base coat of white underneath. An alternative if you have a patridge (blade) front sight is to put a very thin strip of white Scotchlite reflective tape on it. Tricky to cut and works best on a non-serrated blade but it really does show up.
