Bead Sight Aiming

I was testing out my new Stoeger M2000 with rifled slugs at 50 yards. Fiber optic front sight, no centre bead.

I eventually got them on target, aiming about 4" right, and what seemed to be quite high.

I'm new to shooting, and not entirely sure of the correct method of aiming with the single bead.

Should I be able so see the full length of the grooves on top the receiver in my line of sight?

You have already figured out how to aim with your single front sight, so there is not much we can add.
But for more precise shooting with slugs, you will need to add a back sight or scope, or change to a barrel with sights already installed.
 
Good patterns at 50 yards might be a lot to ask from a bead sight. If you're hitting high, and seeing the full length of the rib-top grooves, I would sit your bead right ontop of your rib (so you would NOT see the full length of the grooves on the rib - just the bead sitting on top of the shape of the rib). A cheap thing to add would be a 1-piece magnetic product from Truglo or HiVis that gives you a rear and front fibre-op sight. Again though, out of a smoothbore, I have not done much better than 8" patterns much past 40 yards.
 
Your eye is the rear sight, if you don't shoulder the same each time you have changed your rear sight adjustment. At close range on a deer size target probably not an issue but past 30 to 40 yards it probably is.
