If you cooking meat for certain period of time there is no risk or problems...
If stir or fry it has to be longer than 10-15 min period on 80c or above.
I did not know of this but it is what my vet told me.
 
I really enjoy bear meat. Best i like it is as minced meat. I make my own and add fat(if needed) last bear was shot in the fall so i didnt add anything extra and it turned out really well.
