beating a steak to make it tender

Those Hobarts are TOP OF THE LINE tenderizers and are the only one I used in over 20yrs in the business.

No wonder TW like to hang around with ya :D

BTW, they work great on bnls chicken breasts and pork cutlets before you bread them. Wash the cutters right away when the meat is still very fresh and with cold water to start. Hot water seams to "cook" the meat chunkies a bit and they stick harder.

Another method of tenderizing tough cuts of meat is marinating it in some kind of juice. I know that Ponderosa (the old steak restaraunt chain) use to soak the cheapest cuts of steak (from Australia) in huge vats of papya juice. Wine does a pretty good job too.

Most of the equipment used in meatrooms is Hobart brand. It's the best out there, but it's crazy expensive.

New automatic mixer grinders were like $20K. :eek:

look,s like i,ll just get a hammer and beat my meat..but ya neaver know..i might score a cheapy at a yard sale or something...well so im wishing;)
 
One of the guys in our hunting club had one that looked like that Hobart tenderizer...except you turned it with a handcrank...worked good .
