No Im real
I like to use it for sporting or hunting small game maybe
Im a tall guy around 6.4 or 6.5
I like side by side shut guns
Sporting and small game really only needs 2-3/4" chambers. 3" is unnecessary and adds weight to the gun. But if you find a 3" gun you like it's not an issue.

Being tall may cause problems. Most guns are built to fit people 5'-8"? to 6-1? or so. You'll probably need a longer length of pull to start with. That could require a gunsmith to resolve, or at the very least a thicker pad.

Side by sides are just so elegantly beautiful, aren't they?

Elegantly beautiful, they are. Some can even be classified as works of art. One fine example, being the 'Best' guns produced by English Gunmaker: Purdey. These guns epitomize the highest mastery of the gunmaker's art. Fully functional...yet slim, graceful and classically beautiful, at the same time.

Showing bias here, but....SxS's also point the most naturally, in my experience. Especially those with 'splinter' fore-ends. Which readily allow the shooter to get their control hand well forward on the barrels. At game, the gun seems to move and point effortlessly, between the hands.

I grew up around double barreled guns. Though I do own and shoot other gun types, like O/U's, pumps or autoloaders...a trusty SxS is most often the one I pull from the gun cabinet, for a day' in the field.

Simple and reliable. Gets the job done....with class. A good side-by-side is... at least in my view, hard to beat.

My .02 cents worth

For a beginner I think it would be wise to stick to standard shell lengths. Especially given he/ she might want to sell/ trade up. There isn't much market for the 2.5" guns though some of the pre-war ones are pretty nice.
I see your point.
- For walking the woods looking for small games, my recommendation would still be a nicely used British double in the 6 lbs range... A just buy some Kent/Challenger 2.5" shells.

Yes, probably a little more expensive than promotional 2 3/4" 12g... But realistically, how many boxes do you go through on any given year?
